An Omelette Robert Would Be Proud Of

I've always struggled with omelettes.
They're not exactly easy.
I finally have the perfect pan.

Today, I decided to try to heat and coat the pan with coconut oil.  The eggs cooked so perfectly in that oil!!!

I was able to flip that sucker like a pancake!  Add some pesto, Romano Parmesan and white cheddar cheese - this breakfast was the BOMB! (BOOM)
